Fudgy Peanut Butter Brownies with Chocolate Shavings
For the Brownies
  1. 1 cup granulated sugar
  2. 1/2 cup all-purpose flour
  3. 1/3 cup dark cocoa powder
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon baking powder
  6. 2 eggs, at room temperature
  7. 1/2 cup (1 stick) unsalted butter, melted
  8. 1/2 teaspoon vanilla extract
  9. 1 cup chocolate chunks
For the Peanut Butter Frosting
  1. 6 tablespoons unsalted butter, softened
  2. 3/4 cup creamy peanut butter
  3. 1 cup confectioners' sugar
  4. 1 dark chocolate bar (for grating over top, optional)

Instructions

  1. Grease an 8x8 inch baking pan. Preheat oven to 350 degrees F. Set aside.
  2. 1. Start by making the brownies. In a large bowl, whisk together all the dry ingredients. Add the eggs, butter, and vanilla and combine until well incorporated. Add the chocolate chunks and stir. Pour the batter into the greased pan and put into oven. Bake for 35-40 minutes or until the brownies are set. Remove from the oven and let cool. Meanwhile, prepare the peanut butter frosting.
  3. 2. In a small bowl, mix together butter and peanut butter until smooth. Slowly add confectioners' sugar and mix until fully incorporated. Once the brownies have cooled, spread frosting evenly over the top and using a cheese grater, grate chocolate over the top (as much as desired). Refrigerate for 30 minutes (it helps with the cutting) or until ready to serve.
