Chocolate Coconut Protein Pancakes with Healthy Chocolate Frosting

Ingredients

  • ¼ cup Eggwhites (2 egg whites)
  • ¼ cup Trutein Chocolate Peanut Butter Protein Powder (20g)
  • 2 Tbsp Coconut Flour (15g)
  • ¼ cup Oatmeal (ground into fine four)
  • ½ cup Unsweetened Vanilla Almond Milk (may need to add a bit more depending on protein used)
  • 1 tsp coconut oil
  • 1 tsp Pure Vanilla Extract
  • 1 Tbsp Xylitol
  • 15g nonfat Greek Yogurt
  • 1 tbsp nonfat cream cheese
  • 2 tsp cocoa powder
  • sweetener to taste (I’ve used a few drops of liquid vanilla stevia or xylitol)

Instructions

  1. Grind oatmeal into a flour using a small food processor.
  2. Combine all dry ingredients
  3. Add in wet ingredients, blend (batter will be thick- should be slightly less thick than a brownie batter)
  4. Drop ¼ cup of batter onto pan coated with non-stick spray
  5. Cook until edges begin to bubble.
  6. To Make Frosting:
  7. Combine last four ingredients (yogurt, cream cheese, cocoa powder and sweetener)
  8. Spread on pancakes and enjoy!
