Chocolate Coconut Protein Pancakes with Healthy Chocolate Frosting
- ¼ cup Eggwhites (2 egg whites)
- ¼ cup Trutein Chocolate Peanut Butter Protein Powder (20g)
- 2 Tbsp Coconut Flour (15g)
- ¼ cup Oatmeal (ground into fine four)
- ½ cup Unsweetened Vanilla Almond Milk (may need to add a bit more depending on protein used)
- 1 tsp coconut oil
- 1 tsp Pure Vanilla Extract
- 1 Tbsp Xylitol
- 15g nonfat Greek Yogurt
- 1 tbsp nonfat cream cheese
- 2 tsp cocoa powder
- sweetener to taste (I’ve used a few drops of liquid vanilla stevia or xylitol)
- Grind oatmeal into a flour using a small food processor.
- Combine all dry ingredients
- Add in wet ingredients, blend (batter will be thick- should be slightly less thick than a brownie batter)
- Drop ¼ cup of batter onto pan coated with non-stick spray
- Cook until edges begin to bubble.
- To Make Frosting:
- Combine last four ingredients (yogurt, cream cheese, cocoa powder and sweetener)
- Spread on pancakes and enjoy!
